I’m so excited to share this recipe with you! It brings me to my childhood and to my eastern European roots. It reminds me of a sweet dish called Skubanky in Czech, which is basically a potato gnocchi served with icing sugar, poppy seeds and melted butter. I know it sounds odd but this is a much loved childhood dish and everyone in czech knows this simple pleasure recipe.
This two ingredient sweet potato gnocchi recipe is a savoury dish but it is just as good, probably better! I used sweet potatoes and a standard flour and thats it! Ok, well maybe a pinch of salt too.
What you are going to serve it with is entirely up to you. I cooked mine with spinach, cherry tomatoes and garlic. Making gnocchi was easy and I really think you should try it! You will never, ever buy already made gnocchi!
I started off by roasting sweet potatoes in a large pyrex dish with a half cup of water. After cooling them down the skin peels off easily. Then I mashed the potatoes using a potato masher. I combined the mash with a flour to create the ‘dough’. There is no need to be adding more and more flour to the dough to avoid sticking to the working surface, the secret is to combine this gently and fairly quickly without overdoing it. You will need to dust your work top with a flour.
I split the dough into few smaller pieces and i rolled it into a long ‘noodle’ shape which I cut into a small pieces. I pressed down with a fork to create a pattern but to be honest this is not necessary at all.
These fluffy little pillows will only need a few minutes to cook in a boiling water. Scoop them up with a slotted spoon when they start rising to the surface.
Heat up your pan with a bit of olive oil, add spinach, tomatoes and garlic and mix in your gnocchi.
