If you like pineapple, I promise you, you will LOVE this pineapple salsa recipe! It will soon become your favourite addition to tacos, wraps, or as a side for fish or chicken. There are no limits to use this beauty!

Double the recipe for bbq parties as it is a real crowd pleaser! It’s only February now but who doesn’t need a little sunshine on their plates this time of the year, right?

I’m using canned pineapple and I’ve never tried using fresh one for salsa but I’m sure it would be fine to use too. You can add chilli flakes or jalapeño peppers to spice it up but as I needed a ‘toddler friendly’ version, I’m keeping it pretty simple. Sadly, my husband hates coriander so I used fresh parsley this time but if I was to make this for myself I would happily use the whole bunch of coriander/cilantro 😉

- 1 can 200g (drained) pineapple pieces
- 1/2 Red Onion
- 1/2 Red Pepper
- 1 handfuls fresh cilantro (coriander) Or Fresh Parsley
- chili flakes optional
- 2 tbsp juice from the pineapple
- 1/2 freshly squeezed lime juice
- salt
Ingredients

- Chop finely all ingredients or use food processor.
- Mix all ingredients together. Season with salt, pineapple juice and lime juice. Sprinkle on some chilli flakes in needed.
- Chill in the fridge before serving.
