I don’t have many cookbooks at home but the few I have I really enjoy using. Since cooking mainly dairy free diet most of them became useless but the other day I looked through my Gordon Ramsey’s cook book to see if there are any dairy free and ideally vegan recipes at all. I was really pleased to find a recipe for Chickpea Koftas as they are a perfect savoury healthy snack! These sounded delicious and to my joy I had all the ingredients needed at home to try this straight away!
I absolutely loved these little things (my husband not so much, Phoebe was impartial). I baked them instead of frying them and they turned out just fine. I had mine with sweet chilli sauce but they are probably the best with avocado dip. I served them with a side salad and chives as I have lots in the garden right now and the flowers are just so pretty!
They are an ideal snack or a light lunch. Chickpea is an amazing source of protein, fibre, calcium and iron making it the perfect ingredient when cooking dairy free. Spinach just making this dish super healthy and it always made me feel better knowing Phoebe had some green veg.
