Healthy Blackberry Muffins
Dairy free, egg free, oil free, refined sugar free Blackberry Muffin Recipe

  • 1cup self raising flour
  • 1cup Oats
  • 1tsp baking powder
  • 2tsp cinnamon
  • 1/2cup maple syrup
  • 6 datesput in a cup and cover with boiling water and leave for at least 5 mins
  • 2 Ripe Bananasmashed up
  • 1handful pecanschopp these or use food processor
  • 1handful blackberries
  • 1/2cup almond milkor any of your fave
  1. Mix the flour, oats, baking powder and cinnamon together.
  2. Blend together the dates with boiling water (just enough to cover the dates) and bananas (I used my stick blender and a glass jug). Mix in with the dry ingredients. Mix in the milk.
  3. Crush your pecans by bashing them in a plastic bag using rolling pin or use food processor. Add with the other ingredients but leave a little bit to use as toppings. Add blackberries and gently fold in.
  4. Spray your muffin tin with oil. Fill the moulds almost full. Bake for 25 mins on 180 degrees. Sprinkle some crushed pecans on top when finished.
