My favourite morning snack got to be the Granola Breakfast Cookies. They are packed with nutrients and are free from refined sugar making them perfect healthy snacks for a toddler on the go. They are of course dairy free. If you ever have a day when you have to skip breakfast, these would make for an awesome grab and go brekkie. They are super easy to make and taste great.
Great things about these little beauties is that you can freeze them and when needed just pop them in your little ones lunch bag. I enjoyed mine with a cup of coffee.
I would probably adjust the recipe according to what kind of seeds or nuts i have in my cupboard. Today, we added some pumpkin seeds because Phoebe loves them and raisins for the sweetness. Bananas help combine the ‘dough’ together and if you use very ripe, black bananas then you may not need any other sweetener. I used maple syrup and honey as I run out of maple syrup while making these..oops.

Breakfast Granola Cookies
- 3 ripe bananas
- 100 g oats
- 50 g raisins
- 30 g shredded coconut
- 20 g coconut flour optional
- 1 tsp cinnamon
- 20 g pumpkin seeds or any other seeds
- 20 g maple syrup or honey
Use blender to mash the bananas until smooth.
Mix in the other ingredients.
Line baking tray with a baking paper.
Make 12 small size balls and press to make them flat into cookie shapes.
Bake for about 15 mins on 180 degrees.
