As a mum of a toddler, I am always trying to find ways to sneak more veggies into Phoebe’s diet. Hummus and breadsticks and veggie sticks has been a favourite snack for a long time but it seems it’s time for an update. I tried this amazing smoky roasted carrot dip at a local food market the other day and I think the one I made it’s not too bad either, although it is more ‘kid friendly’. This roasted carrots and cashew dip is ridiculously easy to make! I mean, two ingredients (ok, not counting oil and salt)!
I LOVED it with little rice cakes and nachos, but it would be good with any vegetable sticks or just with plain breadsticks. The taste is slightly sweet due to roasted carrots and cashews make the dip nice and creamy. There is no need for anything else really, but of course you could spice it up if needed 😉 As always dairy free and this time gluten free too!
Firstly I soaked the cashews and roasted my carrots which gives them really nice and sweet flavour. I used my stick blender but for smoother texture I would use more powerful food processor if you have one. Then I blended the carrots together with soaked nuts and added a bit of rapeseed oil and seasoned with salt. That’s it, job done 🙂
With carrots being one of the cheapest veggies out there, this snack is a good value for money. If you can buy cashews in big packaging you save a lot of money, especially if you’re using nuts to make your own milk. For my nut milk recipe, take a look here.

- 6 small carrots 250-300 grams
- 80 grams cashews weight before soaking
- 1 tbsp rapeseed oil
- 100 ml water
Ingredients

- Soak the nuts for at least one hour. Discard the water they have been soaking in.
- Roast your carrots with a bit of salt and oil for about 40 mins on 180 degrees.
- Blend roasted carrots together with soaked cashews, water and oil. Season with salt.
- Serve with veggie sticks or favourite breadsticks or crisps. Enjoy:-)
