1/2bunchfresh cilantro (coriander)or parsley if you are a coriander hater 🙂
Heat up a bit of olive oil in a pan, chop the onion and fry for about three minutes. Add the black beans, tomato paste and spices and fry together for another two minutes. Add the stock and minced garlic and leave to simmer for five minutes.
Season with salt.
Serve in warmed up taco shells or tortillas with shredded lettuce, sliced tomatoes, jalapeño peppers, cilantro (coriander) or any other fresh herbs for extra flavour and texture.
