Easy Black Bean Tacos
Naturally vegan recipe for an easy mid week family dinner

  • 400grams black beans
  • 3tbsp tomato paste
  • 1 Red Onion
  • 1cloves garlic
  • 150ml veg stock
  • 1tsp smoked paprika
  • 1/2tsp cumin
  • 1 tbsp olive oil
Additional topping
  • 1/2 shredded lettuce
  • 2 sliced tomatoes
  • sliced jalapeƱos peppers
  • 1 Limeto squeeze on top
  • 1/2bunch fresh cilantro (coriander)or parsley if you are a coriander hater šŸ™‚
  1. Heat up a bit of olive oil in a pan, chop the onion and fry for about three minutes. Add the black beans, tomato paste and spices and fry together for another two minutes. Add the stock and minced garlic and leave to simmer for five minutes. Season with salt.
  2. Serve in warmed up taco shells or tortillas with shredded lettuce, sliced tomatoes, jalapeƱo peppers, cilantro (coriander) or any other fresh herbs for extra flavour and texture.
