I went to a Moroccan restaurant recently and I was reminded of this little gem. Eggplant/aubergine is one of my favourite vegetables as it is so versatile and the taste will satisfy any meat eater! I love adding it to lasagne or curries for its lovely texture and flavour. Roasting it and making it into this lovely dip is probably the best thing you can do if you have one hanging around and wondering what to do with it:-)
The traditional baba ganoush recipe calls for tahini. When using tahini, I normally buy a jar and I end up using a teaspoon or two just to find out few weeks later the whole jar has gone off! That’s why I decided to use almond butter instead as I find the texture similar and the flavour works perfectly. The fact that it is about ten times cheaper helps too!
I warmed up a few mini pita breads in the oven to eat it with but breadsticks would do too.
