A friend of mine lend me a gluten free recipe book (Australian Woman’s Weekly, Gluten Free recipe Book) recently and I found this super yummy dairy free, gluten free recipe for no bake, dates and cashew bars and I totally fell in love!
I love no bake desserts and this dates and cashew bars recipe has added bonus by being dairy free as well as gluten free. There are three layers in this desserts and I enjoyed making them one by one giving me a chance to clean up the kitchen after making each of them:-) For my birthday I got a new food processor which I was dying to put to use. I don’t think I would get very far with my old stick blender with this recipe.
I recommend using powerful blenders/food processor to get the right texture of the base as well as the filling.
The recipe says to chill overnight but there was no way my daughter would wait that long! I managed to leave the tray alone for two whole hours in the fridge and I honestly don’t see a point of leaving it any longer as it was perfectly set.
You really need to try this recipe! You won’t even believe it’s dairy free as the dates gives it almost caramel like flavour. It was a big hit with my family and I’m sure I’ll be making it again very soon!
