Pasta seems to be one of the few dishes Phoebe is always keen on eating. Since it may not be the healthiest thing to eat, I often try different ways to boost it up on the nutritional level.
These three are our current favourites and with the start of the school year, ‘easy’ is what every parent needs. All recipes are super straightforward to make and I love that I can freeze up small portions . This way I can always whip up a quick dinner without the guilt of feeding my toddler convenient food (which is sometimes inevitable of course).
As a working mum I am a big fan of batch cooking and versatile sauces. Don’t limit yourself to pasta, all of these kids friendly recipes are great with rice, chicken, as bases for soups or curries, stews and the hidden veg sauce is an amazing pizza sauce too!
One of Phoebe’s favourite lunches is an english muffin cut in half, covered with the hidden veg sauce and sprinkled with dairy free cheese then put in the oven to melt the cheese.
Each recipe is packed with veggies making them super healthy. All are ‘picker eaters’ friendly. If you have a little person at home who likes to pick things up out of their dinner, than you know how difficult it can be to get them to eat variety of vegetables. These recipes are a great solution.
