Ingredients
noodles
  • 1/2pack spaghettior udon, rice, or any other noodles
  • 4cups grated or chopped red cabbage, carrots, kale
  • 1/2cup sweetcorn
  • 1/2cup red peppers
  • 4 spring onions
  • 1bunch fresh coriander
  • 1tbsp toasted sesame seeds
Sauce
  • 3tbsp soy saucei use reduced salt (use GF if needed GF recipe!)
  • 1/2cup freshly squeezed orange juice
  • 1tbsp freshly squeezed lime
  • 1/4 cup peanut butteror almond or cashew butter
  • 1/4tsp salt
  • 1tsp sriracha sauceoptional
  • 1tsp grated ginger
  • 3tbsp honeyor agave
Instructions
  1. Cook the noodles according to the instructions.
  2. Grate or chop all the veg.
  3. Mix the noodles with veg and combine well with the sauce. Leave to chill.
  4. Serve topped up with fresh coriander, crushed peanuts or toasted sesame seeds. Top up with some fried tofu for more filling dish.
